Ginger!
Its probably one of the most versatile herbs and can be used for all sorts of aliments, from pain and inflammation, nausea and vomiting (not many other herbs have this super power) to stimulation digestion and soothing bloating and you only need the smallest amount of it to get the benefits.
Theres rarely a herbal mix I make up that doesn't contain even a few mls of this herb, because it's a circulation stimulant and helps to potentate the mix making all the other herbs extra awesome.
I adore this herb, especially in winter time as it warms me up from head to toe. I use it In everything from the powdered spice in my morning porridge, a cup of fresh ginger tea after meals for digestion and the essential oil rubbed into my feet at night to ground and warm.
I thought I'd share the most yummy ginger cake ever, try it tonight and let ginger warm your heart and fill your tum!
Ingredients -
1 large piece of ginger, grated and sliced finely. 2 cups of wholemeal flour 250ml of maple syrup 1 cup of honey 1/2 teaspoon of cinnamon, cloves & black pepper. 1 teaspoon of ginger powder. 2 eggs 1 cup of boiling water 1 cup of olive oil 2 teaspoon of baking soda.
Method -
1)Grate and thinly slice the ginger and set aside.
2)Boil the kettle - once boiled put the 1 up of boiling water into a small bowl and add the baking soda. Stir in. Place the sliced ginger into the water.
3)mix all dry ingredients - flour, spices in large bowl.
4)mix all wet ingredients - maple syrup, honey, olive oil, and slowly add the boiled water mixture.
5)Add the wet ingredients in with the dry ingredient and stir together, add the 2 eggs.
6)Place in cake tin and cook in preheated over on 180 degrees for 1 hour or untill knife comes out clean!
7)Let cool. And serve with some warm ginger tea!
