Persian Celery Stew

Celery another underrated super vegetable, full of antioxidants, packed full of minerals and vitamins, including blood loving Vitamin K2, immune boosting and adrenal loving vitamin C, folate, hormonal regulating B6, potassium & super mineral magnesium. 


You might be surprised by all the health benefits of celery; here are my top eight:

1) Reduces inflammation- used for centuries for stiff joints, arthritis, gout, even lung conditions such as asthma, as well as inflammatory skin conditions like acne, psoriasis & eczema.  2) Alkalines the body- inflammation is the start of off illness in the body, and quite often inflammation is caused by over acidity. Thus celery is great to help regulate the bodies alkaline balance.  3) Relieves stress- Full of nervous system loving magnesium, celery is great for stress and anxiety, also great to have at night before bed as it helps you sleep.  4) Helps with digestion- Full of insoluble fiber and water - help to full toxins out of the body via the bowels - helping to have regular bowel movements, which is essential for a healthy digestive system.  5) Great for eye health- There is a reason why those rabbits can see at night, its because they love nibbling on celery and carrot, both of which contain vitamin A, which is imperative for eye health.  6) Lowers blood pressure - phthalides in celery has been proven to boost circulatory health, which in turn has an positive affect on lowering blood pressure.  7)Reduces bad cholesterol-There is a component in celery called butylphthalide, which has been shown to help lower the bad cholesterol.  8) Liver health - Due to all of the above reason, especially being anti-inflammatory, alkalizing and a diuretic, celery is great for liver health as it helps to remove toxins from the body, allowing the liver to be less burdened and thus able to function optimally.


Celery can easily be incorporated into the diet. Can be chopped up into little pieces and used as a 3pm snack. Or try my delicious Persian celery stew, full of nutrients and enjoy all the benefits celery has to offer. 


RECIPE:

1 whole celery - chopped into small pieces - keep leaves 

5 large mushrooms chopped   1 Onion - chopped Bunch of mint & parsley - chopped & washed - add with celery leaves 

1 teaspoon of turmeric powder

1 teaspoon of black pepper

Juice of 3 lemons  Salt to taste.  Hot water to cover the stew 

Fry up the onion in some olive oil, add turmeric powder & black pepper.  Add mushrooms & celery pieces and fry for 2 minutes, add hot water to make sure its covered.  Once simmering add the chopped mint, parsley and celery leaves.  Add lemon juice and salt to taste.  Let it simmer on the stove top - until celery is soft and chicken falls apart Enjoy with basmati rice and yogurt.
